No-bake energy bites
1/2-cup peanut butter (a great source of plant-based protein)
1/2-cup flax seed (another great plant protein, and packed with folate)
1/2-cup chocolate chips (for your sweet tooth)
1/3-cup honey (can substitute agave if desired)
1 tablespoon chia seeds (for omega-3 fatty acids)
1 teaspoon vanilla extract (for flavor)
Combine ingredients in a blender or food processor to desired consistency. Roll into bite-sized balls and refrigerate.
